I just got a 2021 ioniq premium with 44,000 miles on the clock. It was delivered today and looked great, drove well too, but after a few miles I got refill coolant warning, the coolant was way above max when I first looked and then it dropped a little lower but not lower than max.

I have 14 days to trial the car and I can return it for a full refund in that period. I should just return it shouldn’t I? It’s a pity as I liked a lot about it.
My '21 had 80k KM {50K miles} when I bought in Oct '24. Didn't have the coolant warning but I took it to Hyundai dealer near me to have checked for any outstanding recalls/upodates to software etc. They ended up doing a software update, fixing a non operational level 3 DC charger due to stuck locking pin, and the coolant replacement, all of which were done under warranty. I'd give that a try as they seem to have all cars identified by VIN, and which ones have any outstanding recalls etc. Try to DC charge once before you go in, apparently this non operational locking pin does happen to some.

$20k? I know that about a month and a half ago, the exchange rate was about 1.5:1 (AU:US), but that's still absolutely ridiculous.
I agree. Given that they have already replaced the battery (under recall), the charge pin actuator, the passenger wing mirror motor, the driver window motor and a steering column bearing, all under warranty/good will, I would think that pretty soon they will have as much into the car (in retail terms) as I paid for it in the first place!
