I received a notice from Hyundai Bluelink that my Wi-Fi hotspot trial is over. Do I need it to receive periodic software updates, or is the only for web access?

This is precisely why OEMs such as GM are getting rid of CarPlay and more will follow. The manufacturers want you to purchase their data plans and services instead of what you already have with Apple and Google. I wouldn’t be surprised if Hyundai follows this path soon.

Has anyone signed up for the hotspot? The signup process is confusing. For one thing, the Verizon website asks for the IMEI number, but the IONIQ 6 has two of them, both of which are valid, so which should we use?

Aren't these very different things?

The WiFi Hotspot is so you can connect other devices to the WiFi in the car (and then the internet using the car modem).

CarPlay allows your device (iPhone) to project (a few apps that support CarPlay) on the car screen.

Hotspot on your phone can't help you if you're using a wireless Carplay or AA adapter.
As @utah-ioniq points out using CarPlay is actually a good reason to subscribe to a WiFi hotspot if you want to connect other devices.
