I'd like to know is it ok to lift the Ioniq5 one corner at a time to say install winter wheels? seems there'd be possible stress on the battery compartment.

There is no jack supplied. and there is no mention if using a jack in the manuel. the only image shown is 4 lift points and a picture of a hoist which as we now lifts the entire vehicle.

Personally, I would prefer to lift one entire side on the two jack points, but it should be ok to do one tire at a time.

Maybe I'll just get myself a second hydraulique jack and do like you say to lift one side.

What about lifting the suspension arm or axle just enough to get the wheel off the ground without raising the vehicle?

OMG, no. Do not lift on any suspension parts. They are not made to have any pressure applied to them. You will likely do some very expensive damage.
